The Quarantine Series: Baking
Waffles! Who doesn’t love a crisp and fluffy homemade waffle?
Todays addition to this series, is our favorite waffle recipe! This recipe is really easy and it will give you a good amount of waffles. I will typically double the recipe so that I can have a bunch left over to freeze. My husband loves these and typically will toast one to have with his coffee in the morning. I hope you enjoy these!
Waffles
Ingredients
- 4 cups all-purpose flour
- 1 tsp baking powder
- 5 eggs
- 1 cup sugar
- 1/2 lb butter (2 sticks) unsalted, at room temperature
- 2 tsp vanilla extract
- 1 2/3 cups milk
- 1/4 cup cornstarch (it may sound weird, but it gives the waffle that extra crisp factor)
Instructions
- Preheat your waffle maker and get it hot
- In a bowl whisk the flour with the baking powder.
- In another bowl, add the eggs and whisk them with sugar, butter and milk. Stir in the vanilla extract.
- Add the flour mixture to the wet ingredients and whisk.
- Pour about 1/4 cup of your batter into the middle of the waffle maker and close. Bake each waffle for about 3 minutes until it becomes golden-brown.
- Place the baked waffles on a plate and repeat with remaining batter.
I typically will have a cookie rack available and will let them cool on the rack. Once they are completely cooled I will wrap them in parchment paper and place them in a freezer bag. Then you can just pop in the toaster for an easy no fuss breakfast.
Enjoy!
